Cheese and Oat Scones

These delectable oat and cheese scones are so much better than sandwiches and they can be made in advance for the freezer. Serve them with assorted savoury toppings and fillings, or just split when warm and generously buttered.

    Pre-heat oven to 200C/400F/Gas Mark 7. Grease a large baking tray with a little butter or oil.

    Mix the flour, oats, salt and pepper together in a large mixing bowl and add the butter; rub the butter into the flour mixture until it resembles fine breadcrumbs. Stir in the cheese and mix well.

    Add the egg and milk mixture, gradually, until you have a soft dough. (Reserve a little of the egg mixture for the glaze)

    Roll or pat the scone mixture out on a floured board and stamp the scones out with a cutter. Carefully place the scones onto the prepared baking tray and brush the egg glaze over them. Sprinkle the extra oats and grated cheese over the scones.

    Bake for 10 minutes, until the scones are well risen and golden brown.

    Allow to cool on a wire rack and serve split in half, warm or cold with butter or the savoury toppings as listed above.

    Freeze when cool before toppings are added; defrost for 4 to 6 hours and re-heat in a warm oven for 5 minutes to serve.
