Caramelised Banana Bread Oatmeal

Here’s a beautiful bowl of bananas for when you’re in your pyjamas. Start your day off right with our thick and creamy, caramelised banana bread oatmeal.

Ingredients

50g Mornflake Stoneground Oatmeal

240ml dairy-free milk

1 ripe banana, mashed

20g raisins

1-2 tbsp coconut sugar (or brown sugar)

1 tsp vanilla extract, or paste

½ tsp cinnamon

 

Toppings

1 tbsp chopped walnuts

1 tbsp grated dark chocolate

1 tbsp almond butter

½ banana, sliced + 1 tbsp vegetable oil + 1 tbsp maple syrup

Method

Place the oatmeal, milk and mashed banana into a small saucepan along with the chopped raisins, coconut sugar, vanilla and cinnamon.Bring to the boil, then reduce the heat and continue to cook until the oats have thickened and reached your desired consistency.

Whilst the oatmeal is cooking, heat 1 tbsp vegetable oil in a frying pan and once hot, add in the banana and maple syrup. Cook for a couple of minutes on each side, until golden and crisp. Once the oatmeal is cooked, pour into a bowl, then top with the caramelised banana, walnuts, chocolate and almond butter.
