Snowman Pancakes

Ingredients

THE PANCAKES 

Recipe, makes 3-4 servings; 

1 1/2 cups plain flour 

1/2 cup Mornflake Creamy Superfast oats (blitzed into an oat flour) 

1/4 cup sugar 

4 tsp baking powder 

Pinch of salt 

1 3/4 cups milk 

1/4 cup melted butter 

2 tsp vanilla extract

1 egg 

THE BUTTER SNOWMAN, per snowman 

2 tbsp butter 

5 mini chocolate chips or cacao nibs 

Mini slice of carrot 

Rosemary sprigs

Method

  • For the pancakes, mix all your dry ingredients in a mixing bowl, then make a well in the centre, mixing in your wet ingredients until combined. 
  • Heat 1 tsp of butter in a pan on medium heat, then add a ladle of your pancake batter to the pan, allowing to cook until bubbles start to form on the top. Flip your pancake, cooking for another 30 seconds, then repeat with the rest of the batter. 
  • Whilst your pancakes are cooking, heat up a teaspoon with some boiling water, then scoop 2 spoons of butter out of your block, one slightly bigger than the other. 
  • Put the butter in the palm of your hands and roll into a ball, repeating with both balls, then stack on top of one another to make the base of your snowman. 
  • Place 2 chocolate chips as the eyes, then make buttons down the centre of the bottom piece, sticking 2 rosemary sprigs in as arms. 
  • Slice a triangle off the end of your carrot, wedging it into the top sphere as a nose then set aside on a plate in the fridge whilst you cook your pancakes. 
  • Stack a few pancakes on a plate, topping with your butter snowman, a dusting of icing sugar and some maple syrup.
