Do you find yourself with a glut of strawberries? Or just want to try something new? Well we bet you’ve never roasted your strawberries before, and boy are you missing out! This recipes really brings out the best of our favourite Summer fruit.
150g Mornflake Organic Oats
100g plain yoghurt*
360ml almond milk, or milk of choice
35g almonds, roughly chopped
1 red apple, grated
1 tbsp chia seeds
1 tsp vanilla
400g fresh strawberries
1-2 tbsp maple syrup
A drizzle of olive oil
Almond butter, to serve
* dairy-free yoghurt can be used here
In a large bowl mix together the oats, yoghurt and milk. Then stir in the chopped almonds, grated apple, chia seeds and vanilla. Place in the fridge to chill for a couple of hours, or overnight.
Before serving, prepare the roasted strawberries.
Pre heat the oven to 180c.
Remove the stems from the strawberries, half them and place into a baking dish. Drizzle with olive oil and maple syrup, toss together and roast in the oven for 15-20 minutes.
Spoon the bircher muesli into the bowls and top with the roasted strawberries and a spoonful of almond butter.
