Our baked doughnuts are lovingly crafted with cocoa, Mornflake Oatbran and freshly grated orange zest, creating a tantalizing taste experience that’s both indulgent and refreshing. Ingredients

THE DOUGHNUTS

2 tbsp cocoa powder

3 tbsp of sugar/sweetener of choice – we use 1 tbsp of stevia

5 heaped tbsp oat flour (Mornflake Superfast Oats blended)

2 heaped tbsp Mornflake Oatbran

30g whey protein powder – chocolate or vanilla

150ml orange juice with bits

100ml water

Rind of 1 orange, finely chopped

1/2 tsp bicarbonate of soda

1 tsp vinegar

Pinch of salt

TO TOP

100g chocolate of choice – we used a mix of dark and milk

Chocolate orange to decorate

Orange rind to decorate

Maldon salt

Method

  • Preheat your oven to 170°C.
  • Add your cocoa powder to a medium mixing bowl, adding a splash of hot water & mixing well until smooth.
  • Add all the dry ingredients, mixing slightly, then add your orange juice drop by drop, stirring as you add it so there are no lumps in the batter.
  • Add your water drop by drop too, stirring so you have a batter.
  • If the batter is too watery add another tbsp or two of oat flour (Mornflake Superfast Oats blended), but you want it to resemble a pretty loose cake batter – more liquid than normal is needed, as the protein powder absorbs plenty of liquid.
  • Peel the rind off an orange, then chop finely, adding to your cake batter bowl.
  • Add 1 tsp of vinegar mixing in well.
  • Grease your doughnut moulds – we used silicone ones – then add 2 tbsp of batter to each one, or fill until 3/4 full.
  • Bake for 15-20 minutes, or until they’ve risen and are firm when touched.
  • Remove from the oven and set aside to cool.
  • Whilst they cool down, melt your chocolate for the top & prep any other toppings.
  • Dip the side of each doughnut that has been face down in the mould in the chocolate, then set onto a tray to set.
  • Decorate each doughnut as you’d like – we topped ours with orange rind, chopped chocolate orange & salt.
  • Set in the fridge for at least 30 minutes before serving, and keep in the fridge for up to 5 days for snacks during the week.
