At Mornflake, we’ve combined the delicate flavours of zesty lemon and sweet sugar with the wholesome goodness of oats to create a crepe experience that’s both light and satisfying.

Ingredients

1 egg

50ml of milk

2 tbsp oat flour (Mornflake Superfast Oats blended)

2 tbsp plain flour

TO TOP

Juice of 1 lemon

Caster sugar to taste

Method

  • Whisk your egg and milk in a bowl, then stir through your flours until you have a smooth batter.
  • Leave the batter to rest for 5-10 minutes & prep your toppings.
  • Squeeze the juice from 1 lemon, then add to a jug for serving.
  • When ready to make your crepes, place a large frying pan to the hob on medium heat, then grease lightly with butter.
  • Add a ladle of batter to the centre of the pan, then spread with a spoon, or a crepe spreader if you have one – spread the pancake as thin as you can over the base of the pan, and if there are any gaps, add a drop more batter and spread so you have a full round pancake.
  • Allow the crepe to cook for 1 minute – 90 seconds, then flip and allow to brown on the other side.
  • Repeat this with the rest of the batter, setting aside on a plate.
  • When ready to serve, fold each crepe in half, then in half again, and plate them up on your serving plate.
  • Top with your lemon and sugar, or with any other toppings you’d like.
