Ingredients

2 eggs

6 tbsp oat flour (Mornflake Superfast Oats blitz)

4 tbsp almond flour

1/4 tsp baking powder

Salt

1-2 tbsp sugar

125ml milk

1 tbsp flour if needed to thicken

Handful of blueberries per pancake (added before flipping)

Method

  • Add everything for the pancake batter to a blender, apart from the blueberries, blending until smooth.
  • Heat 1 tsp of butter in a pan on medium-low heat, and once melted, pour in some pancake batter, so you have a pancake the size of your palm.
  • Cook on medium-low heat until the pancakes start to form bubbles on the top. Place a few blueberries on the top of the pancake, then flip and cook on the other side.
  • Repeat with all the batter, then stack your pancakes and serve with blueberries and maple syrup.
