Add everything for the pancake batter to a blender, apart from the blueberries, blending until smooth.
Heat 1 tsp of butter in a pan on medium-low heat, and once melted, pour in some pancake batter, so you have a pancake the size of your palm.
Cook on medium-low heat until the pancakes start to form bubbles on the top. Place a few blueberries on the top of the pancake, then flip and cook on the other side.
Repeat with all the batter, then stack your pancakes and serve with blueberries and maple syrup.
