Ingredients

THE MAC & CHEESE

150g macaroni

20g unsalted butter

20g plain flour

250ml whole milk

120g mature cheddar, grated

20g parmesan, finely grated

½ tsp dijon mustard

¼ tsp garlic powder (optional)

Sea salt

Black pepper

THE OAT BRAN COATING

60g Mornflake Beta3 Oat Bran

40g panko breadcrumbs

½ tsp garlic powder

½ tsp smoked paprika

Pinch of sea salt

30g plain flour

1 egg, beaten

Vegetable oil for shallow frying

THE HOT HONEY MUSTARD MAYO

3 tbsp mayonnaise

1 tbsp dijon mustard

1 tbsp hot honey

½ tsp lemon juice

Pinch of salt

TO FINISH

Parmesan, finely grated

Small handful fresh chives, finely chopped

Method

  • Boil a saucepan of well-salted water, adding your macaroni and cooking until barely al dente (a minute under packet instructions). Drain well and set aside.
  • Melt your butter in a pan on medium-low heat, stirring in the flour for 1–2 minutes.
  • Gradually pour in your milk, whisking constantly until smooth, then leave to cook for 3–4 minutes until thick.
  • Lower the heat, then stir through your cheddar, parmesan, dijon mustard, and garlic powder until melted. Season with black pepper and salt to taste.
  • Fold the cooked pasta into your cheese sauce until coated — keep it quite thick rather than runny so your bites stay intact.
  • Line a small dish with parchment, press the mac and cheese down tightly into a layer about 2.5cm deep.
  • Refrigerate for 3 hours or overnight until completely set and firm.
  • Turn out the set slab and slice into 12 squares (if slightly loose, pop into the freezer for 20 minutes first).
  • Set up three shallow bowls: one with flour, one with beaten egg, and one with Mornflake Beta3 Oat Bran, panko, garlic powder, paprika and salt.
  • Coat each square in flour, then egg, and finally the oat bran crumb mix, pressing gently to stick.
  • Fill a large pan with 1cm of vegetable oil and place over medium-high heat until hot (around 175°C).
  • Shallow-fry your bites in small batches for 1–2 minutes on each side until deeply golden and crispy.
  • Drain on kitchen paper while you fry the remaining squares, allowing the oil to heat back up between batches.
  • Mix your mayo, dijon, hot honey, lemon juice, and salt in a bowl to make your dip.
  • Stack your hot bites onto a plate, grating parmesan over top and sprinkling with chopped chives.
  • Serve warm with the hot honey mustard mayo for dipping.
