Blackberry & Custard Fruit Granola Danishes

These Blackberry & Custard Fruit Granola Danishes bring together buttery, flaky pastry, sweet berries, creamy custard and crunchy granola in every bite!

Ingredients

For the Blackberry Compote

150g fresh or frozen blackberries

1½ tbsp caster sugar

1 tsp lemon juice

For the Danishes

2 x 320g sheets ready-rolled puff pastry

1 egg, beaten

Approx. 150g ready-made custard

60g Mornflake No Added Sugar Granola Fruit, Nut & Seed

Icing sugar, for dusting

Method

  • Start by making the blackberry compote. Add the blackberries, caster sugar and lemon juice to a small saucepan.
  • Cook over a medium-low heat for 5–7 minutes, stirring occasionally and gently breaking down some of the blackberries, until thick and jammy. Remove from the heat and leave to cool completely.
  • Preheat the oven to 200°C / 180°C fan and line a large baking tray with baking paper.
  • Unroll the puff pastry sheets. Using a round cutter, cut out 12 equal circles of pastry.
  • Arrange 6 of the pastry circles on the prepared baking tray and brush the tops lightly with beaten egg.
  • Place a second pastry circle directly on top of each one, gently pressing the two layers together. Brush the tops with a little more beaten egg.
  • Bake for approximately 15–20 minutes, until the pastry has puffed up considerably and is crisp and deeply golden.
  • Remove from the oven and leave to cool for a few minutes.
  • While the pastry is still slightly warm, use the base of a small glass to gently press down into the centre of each pastry, creating a well for the filling. Be careful not to press all the way through the bottom.
  • Leave the pastry cases to cool before filling.
  • Spoon the ready-made custard into the centre of each pastry case.
  • Add a generous spoonful of the cooled blackberry compote on top of the custard.
  • Finish each Danish with a generous sprinkle of Mornflake No Added Sugar Granola Fruit, Nut & Seed, keeping some of the custard and blackberry visible.
  • Dust lightly with icing sugar and serve.
