Mini Apple Pies

Ingredients

THE PASTRY

100g butter, chilled and chopped into cubes

1 tsp sugar

90g plain white flour

60g oat flour (Mornflake Superfast Oats blitzed)

1 tbsp water

THE APPLE MIXTURE 

4 apples, peeled and chopped into chunks

Splash of water

2 tbsp maple syrup

1/2 tsp cinnamon

Method

  • Preheat your oven to 170°C.
  • First, prep your apple mixture – peel and chop all your apples into chunks, adding them to a medium saucepan on medium-low heat with the rest of the ingredients, covering with a lid. Cook for around 7-10 minutes, until the apples have softened significantly, then turn off the heat.
  • Whilst the apples cook, add your flours and chilled, cubed butter to a bowl, rubbing the butter and flour together with your fingertips until the mixture resembles fine breadcrumbs. Add your sugar and mix, then add 1-2 tbsp of water and press the dough together to make a ball of pastry.
  • Flour your surface and your rolling pin, then roll your dough out into a rectangle about 0.5cm thick.
  • Cut your apple pie bases out with a cookie cutter, then place them into your muffin tins, ensuring there are no holes in the pastry.
  • Prick the pastry bases with a fork, then add to the oven and bake for 10-12 minutes until they’ve started to crisp up.
  • Mash your apples with a potato masher, then add 1 tbsp of the apple mixture to the centre of the part-cooked pastry cups.
  • With the remaining pastry, slice 0.5cm strips out of the dough, then form lattice shapes on the top of each pie.
  • Bake in the oven for 12-15 minutes, until the lattice pastry has turned golden brown and crispy – you can bake them for longer if needed.
  • Remove from the oven, leave to cool, then serve with a sprinkle of icing sugar.
