Hot Cross Bun Baked Oats

A cosy twist on a classic, these Hot Cross Bun Baked Oats are soft, spiced, and perfect for a comforting breakfast.

Ingredients

60g Mornflake Gluten Free Porridge Oats (blitzed into an oat flour) 

30g protein powder 

1/2 tsp baking powder 

Pinch of bicarbonate of soda 

1/2 tsp cinnamon 

1/4 tsp mixed spice 

1 tbsp yoghurt 

1 tbsp maple syrup 

250ml milk 

4 tbsp raisins 

Orange zest 

THE FLOUR TOP 

4 tbsp flour 

2.5 tbsp water

Method

  • Preheat your oven to 180°C (160°C fan) and prepare two ramekins.
  • In a bowl, mix together the oat flour, protein powder, baking powder, bicarbonate of soda, cinnamon, mixed spice and salt.
  • Add the milk, yoghurt, maple syrup and vanilla extract, then stir until smooth. Fold through the raisins and orange zest.
  • Pour the mixture into your prepared ramekins and smooth the top.
  • In a small bowl, mix the flour and water to form a thick but pipeable paste. Transfer to a piping bag (or spoon into a small sandwich bag and snip the corner), then pipe a cross over the top.
  • Bake for 20–25 minutes, until set on top but still soft in the centre.
  • Allow to cool slightly before serving. Enjoy warm as is, or top with yogurt, butter or a drizzle of maple syrup.
