Hong Kong Style French Toast

Golden, crispy, and irresistibly indulgent. Crunchy on the outside, soft and fluffy on the inside, it’s the ultimate sweet comfort treat!

Ingredients

THE FRENCH TOAST

3 slices thick white bread

2–3 tbsp smooth peanut butter

2–3 tbsp granola (slightly crushed/ broken into small pieces) 

1 egg

30ml milk 

½ tsp vanilla extract

Butter or oil, for frying

TO SERVE

Optional: Butter 

Condensed milk

Method

  • In a small bowl, mix the peanut butter with the granola until combined.
  • Spread half the mixture onto one slice of bread, top with a second slice, then spread the remaining mixture on top. Finish with the third slice to create a triple-layer sandwich. Press down gently.
  • Slice the crusts off your bread, then in a shallow bowl, whisk together the egg, milk and vanilla extract.
  • Heat 2 tbsp butter or oil in a pan over medium heat.
  • Carefully dip the stacked sandwich into the egg mixture, turning to coat all sides. Leave it in the mixture for no longer than a few seconds, or the bread may start to break apart. 
  • Cook the sandwich for 2–3 minutes per side, turning carefully, until golden brown and crisp on the outside.
  • Place onto your plate, drizzling generously with condensed milk and serve.
