Guinness Cake

This indulgent Guinness Cake is rich, soft and full of  flavour, with a hint of stout for a truly unique bake!

Ingredients

THE GUINNESS LOAF 

125ml Guinness or any stout beer
125g unsalted butter, cubed 

40g cocoa powder
180g caster sugar
1 room temperature egg
½ teaspoon vanilla extract optional
1 tbsp Greek yoghurt 

50ml milk 

100g plain flour 

40g Mornflake Creamy Superfast Oats (blitzed into an oat flour)
1 teaspoon bicarbonate of soda 

1/4 tsp baking powder

TO SERVE

1 tbsp cream cheese per slice 

Sticky toffee sauce or salted caramel 

Granola 

Method

  • Heat your oven to 170 °C. Grease and line a loaf tin with baking paper, leaving a bit of overhang to make removing the cake easier later. 
  • Pour the Guinness and cubed butter into a medium saucepan and warm over a medium heat until the butter has fully melted. Remove from the heat. 
  • Into the melted stout mixture, stir in the unsweetened cocoa and sugar until well blended and smooth. 
  • In a jug, whisk together the egg, yoghurt and milk and vanilla extract. Pour this into the stout and cocoa mixture and stir until just combined. 
  • Sift the flours, baking soda and baking powder into a large bowl. Gradually add the stout mixture to the dry ingredients, whisking until everything is fully incorporated and the batter is smooth. 
  • Transfer the batter into your prepared loaf tin and bake in the preheated oven for about 35–40 minutes. It’s done when a skewer inserted in the centre comes out clean and the top springs back gently to the touch. 
  • Allow the cake to cool in the tin for a few minutes, then remove it to a cooling rack. 
  • Slice to serve. Top each slice with 1 tbsp of cream cheese, spreading slightly and creating a small well in the middle. Drizzle over caramel or sticky toffee sauce, sprinkle with granola, and serve.
