Savoury Breakfast Bowl with Heart Shaped Oat Waffles

Swap the sweet waffles for a healthier savoury version with this vegan recipe. Serve oat waffles alongside spiced scrambled tofu, spinach, avo and tomatoes for a nourishing start to the day.

Ingredients

Savoury Waffles
200g Mornflake Gluten-Free Superfast Oats
100g Plain flour (gluten-free if needed)
2 tbsp Chia seeds
360ml Dairy-free milk
¼ cup Nutritional yeast
2 tsp Onion powder
1 tsp Garlic powder
Salt and pepper, to taste

Tofu Scramble
1 tbsp of Dairy-free butter
280g Firm tofu
1 tsp Turmeric
½ tsp Black salt
A splash of dairy-free milk

To Serve
200g Baby spinach, steamed
125g Cherry tomatoes, grilled
Half an avocado
Salt and pepper, to taste

Method

Pre-heat your heart shaped waffle iron.

Put all of the ingredients for the waffles into a food processor and process until well combined.

Pour half of the mixture onto your waffle iron and cook for 5 minutes (or as per your waffle irons instructions). Once golden, remove the waffles and repeat this step with the rest of the mixture.

Whilst the waffles are cooking, prepare the tofu scramble.

Melt the butter in a frying pan, then add in the crumbled tofu along with turmeric, black salt and dairy-free milk. Cook over a medium-high heat for 5-10 minutes, until cooked through.

Serve with the waffles with the tofu scramble, steamed spinach, grilled tomatoes and avocado.
