Leave the plain ol’ mince pie out for Santa on Christmas Eve and keep these irresistibly indulgent mince pie oats for yourself.
100g Mornflake Gluten-Free Porridge Oats
360ml dairy-free milk
60ml orange juice
1-2 tbsp brown sugar, to taste
1 tbsp chia seeds
1 tbsp orange zest
1 tbsp lemon zest
1 tsp cinnamon
½ tsp ground ginger
¼ tsp nutmeg
25g sultanas
25g dried cranberries
25g raisins
25g flaked almonds
Toppings
A drizzle of cream (optional)
Remaining fruit and nut mix
Place the oats in a large bowl along with the milk, orange juice, chia seeds, orange and lemon zest and spices. Stir together, then set to one side.
Mix together the sultanas, cranberries, raisins and flaked almonds in a small bowl. Stir half of the mix in with the oats, and keep the other half back for topping.
Place the bowl of oats in the fridge and leave overnight before serving.
In the morning, take the overnights oats out of the fridge divide between 2 bowls and top with the remaining fruit and nut mix. Serve with a drizzle of cream for a real treat!
