THE GUINNESS LOAF

125ml Guinness or any stout beer
125g unsalted butter, cubed

40g cocoa powder
180g caster sugar
1 room temperature egg
½ teaspoon vanilla extract optional
1 tbsp Greek yoghurt

50ml milk

100g plain flour

40g Mornflake Creamy Superfast Oats (blitzed into an oat flour)
1 teaspoon bicarbonate of soda

1/4 tsp baking powder

TO SERVE

1 tbsp cream cheese per slice

Sticky toffee sauce or salted caramel

Creamy Superfast Oats

Heat your oven to 170 °C. Grease and line a loaf tin with baking paper, leaving a bit of overhang to make removing the cake easier later.
Pour the Guinness and cubed butter into a medium saucepan and warm over a medium heat until the butter has fully melted. Remove from the heat.
Into the melted stout mixture, stir in the unsweetened cocoa and sugar until well blended and smooth.
In a jug, whisk together the egg, yoghurt and milk and vanilla extract. Pour this into the stout and cocoa mixture and stir until just combined.
Sift the flours, baking soda and baking powder into a large bowl. Gradually add the stout mixture to the dry ingredients, whisking until everything is fully incorporated and the batter is smooth.
Transfer the batter into your prepared loaf tin and bake in the preheated oven for about 35–40 minutes. It’s done when a skewer inserted in the centre comes out clean and the top springs back gently to the touch.
Allow the cake to cool in the tin for a few minutes, then remove it to a cooling rack.
Slice to serve. Top each slice with 1 tbsp of cream cheese, spreading slightly and creating a small well in the middle. Drizzle over caramel or sticky toffee sauce, sprinkle with granola, and serve.
