Flipping our way into the holiday spirit with this perfect stack of fluffy Gingerbread Pancakes. After all, who needs gingerbread houses when you can have gingerbread stacks!?

Ingredients

  • 1/2 a super-ripe banana1 egg

    1 egg white

    4 heaped tbsp of Mornflake Superfast Oats

    1 heaped tbsp wholemeal flour

    Sprinkle of ground ginger

    Sprinkle of cinnamon

    1/4 tsp baking powder

    Pinch of salt

Method

  • Add everything for the pancakes to a blender, blending until you have a smooth pancake batter.
  • Grease a non-stick pan with butter or oil, then leave on medium low heat for 30 seconds – 1 minute to heat up.
  • Add 1/4 of your batter at a time, making 4 pancakes.
  • When ready to flip, they should’ve risen slightly, and started to form bubbles on top.
  • Cook on the reverse side for 20-30 seconds, then stack your pancakes on your plate.
  • Top with whatever you like – we used butter and maple syrup, but yoghurt and fruit would work, and even some granola for crunch.
