Ingredients

88g oat flour (Mornflake Creamy Superfast Oats blended)

50g vanilla whey protein

1 tsp baking powder

1 tbsp stevia/ 2-3 tbsp sugar/ sweetener of choice

1/4 tsp cinnamon

300ml milk

2 tbsp almond butter

1 tbsp yoghurt

1 tbsp vinegar

Handful of chopped chocolate

2 heaped tbsp cocoa powder + splash of hot water

Method

  • Preheat your oven to 170°C.
  • Mix your cocoa powder and hot water together to make a paste.
  • Mix your dry ingredients in a large mixing bowl, then add your milk, mixing well until you have a cake batter.
  • Add your yoghurt, almond butter, & vinegar, mixing well, then add your chopped chocolate and mix through.
  • Divide your batter equally between six cupcake cases, then bake for 20-25 minutes, until the cupcakes have risen and are firm to the touch.
  • Remove from the oven and set aside for a couple of minutes before serving.
