Ingredients

THE BASE 

60g dark brown sugar

100g dark chocolate, cut up

100ml boiling water

 

THE CAKE 

75g plain flour

75g oat flour (Mornflake Superfast or Organic Oats blended)

1 tsp bicarbonate of soda

1 tsp baking powder

1 pinch flaky salt

40g cocoa powder + hot water

3 eggs

160g caster sugar

100g yoghurt

75ml neutral oil

Custard/ yoghurt to serve

Method

  • First, prep the base of the cake. Cut up all your chocolate, then sprinkle the brown sugar over the base of your tin (use a medium-large tin here & it doesn’t matter what shape), then evenly spread your chopped chocolate over the top.
  • Pour over your boiling water, allowing the chocolate to melt, then set aside.
  • Heat your oven to 180°C, then to a large mixing bowl, add your flours, baking powder & bicarbonate of soda with a big pinch of flaky sea salt.
  • To a small bowl, add your cocoa powder and a large splash of boiling water, mixing so you have a runny paste.
  • Crack your eggs into a separate mixing bowl, along with your sugar, whisking until light in colour, and airy. Pour in your cocoa powder mixture, then add the yoghurt and oil, whisking until smooth.
  • Pour the wet mixture into the dry gradually, mixing well with a spatula to combine.
  • Once you have a smooth cake batter, pour it over your chocolate & sugar base, evenly spreading (but be careful not to disrupt the mixture underneath too much, as this will act as a sauce when cooked). You only want the cake batter to fill the tin by 3/4 max, so if it starts to fill the tin more than this, reserve the remaining cake batter.
  • Cover the cake with tin foil, then place this tin in a larger tin, pouring water into the larger tin until about 1/3 of the way up of the smaller tin.
  • Bake the cake in the water bath for 30-35 minutes, then remove from the oven and remove from the water bath to cool slightly.
  • Prep your custard to serve, or serve with yoghurt & fruit.
