Brie, Pumpkin & Cranberry Toastie with an Oat Bran Crisp

Packed with flavour and texture, this hearty toastie is perfect for cosy autumn lunches or chilly weekend treats.

Ingredients

THE OAT BRAN CRISP

45g Beta³ Oat Bran

60ml boiling water

1 tbsp olive oil

Pinch of salt

FOR THE TOASTIE, per toastie

1/4 pumpkin, cut into chunks and roasted

100g brie

1 tbsp cranberry sauce

1 tbsp mayo

Onion slices

Optional: rosemary or sage

2 slices sourdough

Method

  • First, make your Beta³ Oat Bran crisp – preheat your oven to 170°C.
  • To a bowl, add all your ingredients, mixing well, then flatten out onto a lined baking tray, spreading to the thickness of a £2 coin.
  • Prick the top with a fork, then bake for 30 minutes, or until your crisp has turned golden brown, and is crisp to the touch. Leave to cool.
  • Whilst your crisp cooks, cut your pumpkin in half and chop it into chunks.
  • Add to a baking tray, covering in olive oil, salt and pepper, then bake along with the crisp for around 30 minutes.
  • When your crisp and pumpkin are done, it’s time to make your toastie – prep all your ingredients – finely slice 1/2 an onion, cut your brie into chunks, and slice your bread.
  • To one side of your bread, add 1 tbsp of cranberry sauce and the onion slices, then top with your pumpkin, cheese and Oat Bran crisps.
  • Add 1 tbsp of butter to a frying pan on medium heat, allowing it to melt, then toast your toastie on both sides for about 1 minute, until turning golden brown and crisp.
  • Remove from the pan, slice in half and serve.
