Banana and Chocolate Post-Workout Pancakes

This banana and chocolatey deliciousness will brighten up your morning any day of the week.

Ingredients

Makes 6–8 mini pancakes

Coconut oil, for frying
1 medium banana, mashed
2 medium eggs, whisked
20g Mornflake Oatbran
1 tbsp cacao powder

Toppings:

2 tbsp Greek yoghurt
Slices of banana

Method

  • Put the mashed banana, eggs, oatbran and cacao in a bowl and mix with a wooden spoon until smooth and well-combined.
  • Melt a little of the coconut oil in a frying pan and pour in ⅙ of the batter.
  • Cook for 60 seconds, loosen the edges, flip and cook for a further 60 seconds.
  • Pop on a plate and repeat until the rest of the mixture is used up.
  • Add your toppings and tuck in!
