Protein Banana Bread

Serves 1 banana bread

Ingredients

2 super ripe bananas, mashed + an extra banana to slice.

2 tbsp smooth nut butter (cashew is best)

2 tbsp maple syrup

1 tsp vanilla extract

6 tbsp oat flour (Mornflake Superfast Oats blended)

4 tbsp Mornflake Oatbran

60g vanilla whey protein powder

200ml milk

1 tbsp yoghurt

1 tsp vinegar

1/2 tsp baking powder

1/4 tsp bicarbonate of soda

1/4 tsp cinnamon

Sprinkle of nutmeg

Pinch of salt

Method

Preheat your oven to 170°C.
Mash your bananas into a large mixing bowl, then add 2 tbsp smooth nut butter, maple syrup & vanilla.
Stir through the milk, then add your oat flour, oatbran, protein powder, baking powder, bicarbonate of soda & salt.
Add the cinnamon and nutmeg, as well as yoghurt & vinegar, stirring until you have a smooth batter.
If your batter is too dry, add a splash more milk – you want it to mirror a loose cake batter, as the protein powder will absorb quite a lot of liquid.
Grease your cake tin of choice, lining with parchment paper, then pour your batter into the tin.
Slice a couple of rings of the spare banana, placing on the top of the cake.
Bake for 25 minutes, until risen and golden brown, removing from the oven once cooked in the centre.
Slice & store in a container in the fridge for up to one week. Serve for breakfast with yoghurt, or have as a healthy dessert/snack throughout the week.
