This is a little vision of sunshine. With its fresh mango, mint and coconut milk, we can’t think of a more suitable pudding for this Summer.
85g chia seeds
50g Mornflake Superfast Oats
400ml light coconut milk (from a can)
2 tbsp maple syrup
120ml mango puree*
*you can make you own mango puree by blending frozen mango until smooth
3 heaped tbsp of coconut yoghurt
Sprinkle of toasted coconut
½ fresh mango, cubed
3 sprigs of fresh mint
Put the chia seeds, oats, coconut milk and maple syrup into a large bowl, and stir to combine.
Place in the fridge and leave to thicken for a couple of hours, or overnight.
Spoon the chia pudding into 3 glasses until half full. Pour over 3 tbsp mango puree into each glass, before topping with the remaining chia pudding.
Serve with a spoonful of coconut yoghurt, fresh mango, toasted coconut and a sprig of fresh mint.
