Rise and shine with Breakfast Tacos made with Mornflake Jumbo Scottish Oats! Top em’ with whatever tickles your fancy…we love avocado, spinach & eggs on ours!

THE TACO SHELLS

90g Mornflake Jumbo Scottish Oats 

1 egg

Pinch of salt

Oil to fry

Eggs

Avocado

Hot sauce

Method

  • Firstly, soak your Mornflake Jumbo Scottish Oats for about 10 minutes.
  • Drain the water off your oats, then add to a blender with an egg & a pinch of salt, blending until smooth.
  • Add 1 tsp of oil to a frying pan on medium heat, then pour some of your taco batter into the pan to make a pancake.
  • Once your taco has cooked on one side, flip it over and allow to brown on the other side.
  • Leave the tacos to brown slightly, then remove from the heat & repeat with the rest of the batter.
  • Plate up your tacos, then poach, fry or boil your eggs.
  • Smash some avocado onto the taco shell, top with some leaves, then top with your poached eggs, salt and pepper & hot sauce.
