Calling all banoffee pie lovers: you’re going to go crazy for these vegan banoffee waffles, piled high with salted caramel sauce, caramelised bananas and dairy-free ice cream.
Banoffee Waffles
100g Mornflake Gluten Free Superfast oats
60g Buckwheat flour
1 banana
120ml Aquafaba
120ml Oat milk
1 tsp Baking powder
½ tsp Baking soda
Salted Caramel Sauce
250ml Coconut cream
100g Coconut sugar
1 tbsp Cornflour (mixed with 1 tbsp water)
1 tsp Vanilla bean paste
Fried Banana
2 bananas, halved
1 tbsp oil
A splash of maple syrup
To Serve
Dairy-free vanilla ice cream
Shaved chocolate
Preheat your waffle iron according to instructions.
Put all of the ingredients for the banoffee waffles into a food processor and process until well combined.
Spoon the mixture onto your waffle iron and cook for 5 minutes (or as per your waffle irons instructions). Once golden, remove the waffles and repeat this step with the rest of the mixture.
Whilst the waffles are cooking, prepare the salted caramel sauce and fried banana.
For the salted caramel sauce, put all of the ingredients into a small pan and place over a medium heat. Stir continuously for 5 minutes and once the mixture has thickened and began to bubble, remove from the heat. Use immediately, or transfer to a glass jar to cool.
For the fried banana, add 1 tbsp oil in a frying pan over medium to high heat along with a splash of maple syrup. Add in the bananas and caramelise for a couple of minutes on each side.
Once the waffles are ready, serve warm with fried banana, dairy-free ice cream, a drizzle of salted caramel sauce and a sprinkle of shaved chocolate.
*Depending on the type of waffle maker you have, it may make more or less waffles.
