Ingredients

190g plain flour

60g oat flour (Mornflake Creamy Superfast Oats Eaton Mess)

50g sugar

4 tsp baking powder

Pinch of salt

415ml milk

60 g melted butter

2 tsp vanilla extract

1 egg

45g white chocolate chips

TO TOP

Full-fat yoghurt

Mini meringues

White chocolate

Jam

Maple syrup

Method

  • For the pancakes, mix all your dry ingredients in a mixing bowl, then make a well in the centre, mixing in your wet ingredients and sprinkles until combined.
  • Heat 1 tsp of butter in a pan on medium heat, then add a ladle of your pancake batter to the pan, allowing it to cook until bubbles start to form on the top. Flip your pancake, cooking for another 30 seconds, then repeat with the rest of the batter.
  • Stack your pancakes on a plate, sandwiching jam and yoghurt between each layer, then top with more yoghurt, jam, mini meringues, white chocolate and fruit.
