Banana Bread Cookies

Ingredients

30g mashed ripe banana

60g melted butter

100g packed light brown sugar

7g flaxseeds + 2 tbsp (30g) water

1/2 tsp vanilla extract

30g Mornflake Superfast Banoffee Pie (approximate)

40g plain white flour

1/4 tsp baking powder

1 tsp ground cinnamon

Pinch salt

60g chocolate chips

Method

  • In a large bowl, mix together the melted butter, brown sugar & mashed banana until well combined.
  • Combine your flaxseed and water, leaving to soak for five minutes.
  • Add the flax egg and vanilla extract, stirring until fully incorporated.
  • Stir in the flour, oats, salt, baking soda, and cinnamon. Mix until no streaks of flour remain and the dough is fully combined, but don’t overmix.
  • Gently fold in the chocolate chips. Cover the bowl and let the dough rest for about 15 minutes while the oven preheats.
  • Preheat the oven to 175°C and line a baking sheet with parchment paper. Once heated, use a cookie scoop or spoon to portion out your cookie dough into 4/5 cookies, spacing them about two inches apart. The dough will be slightly wet – that’s normal!
  • Bake for 10 to 11 minutes, or until the edges are set and the cookies look puffed up but still soft in the centre.
  • Let the cookies cool slightly before serving.
