Savoury Porridge with Mushrooms, Kale & Toasted Seeds 

Savoury porridge oats is just as hearty and filling as a classic mushroom risotto but takes half the time. Try this easy recipe, created for our Porridge Championships by Rebel Recipes, for a healthy vegetarian dinner.

80g Mornflake Steel Cut Oatmeal Coarse
860ml water
1 tsp toasted sesame oil
2 flat mushrooms, roughly chopped
8 button mushrooms, roughly chopped
2 big handfuls kale
Pinch sea salt
3 – 4 tbsp nutritional yeast
1 1/2 tsp sea salt
Squeeze lemon juice
Big pinch white pepper
1 tsp toasted sesame oil
2 tbsp toasted mixed seeds


Firstly, add the porridge oats to a large saucepan with the water.  Bring the water to a boil then simmer for 20 minutes, stirring frequently.

In another pan add the oil and heat to medium, add in the mushrooms and fry until soft. Add the kale, stir and fry until wilted. Season with a little salt.

Stir the nutritional yeast, salt, pepper, & lemon juice into the oatmeal.  Top with the mushrooms and kale and a splash of toasted sesame oil.  Top with the seeds
