Boost your workout with a bowl of sunshine. Created for The Oat Project by Gains 4 Girls, these tropical overnight oats are creamy, coconutty and topped with fresh fruit – this is high protein breakfast at its best.
80g Mornflake Whole Jumbo Oats
200ml light coconut milk
100g Coyo coconut yoghurt
50g unsweetened, shredded/desiccated coconut
40g chia seeds
100g mango chunks (fresh or frozen)
100g pineapple chunks (fresh or frozen)
1 tsp vanilla extract
1-2 tbsp toasted coconut flakes (to serve)
Mix all of the ingredients, excluding the coconut flakes, in a bowl. Transfer the mixture to an airtight container and leave to set in the fridge for 4-6 hours or preferably overnight.
Once the mixture has had time to come together, spoon into a bowl to serve.
In a pan lightly toast 1-2 tbsp of coconut flakes and sprinkle on top!
The mixture can keep for up to 3 days in the fridge.
