For the overnight oats
100g Mornflake Gluten Free Superfast Oats
300ml coconut milk
15g coconut chips
Juice of ½ lime

Pineapple smoothie

1 medium pineapple

½ banana

Juice of ½ lime


Prepare the overnight oats the night before.

To make the overnight oats, weigh the oats into a bowl and mix in the coconut chips, coconut milk and lime juice. Cover and leave in the fridge overnight.

In the morning, add half the pineapple and banana to a blender with some lime juice then blend until smooth.

Finely slice one half of the remaining pineapple and chop the rest into chunky slices.

Remove the overnight oats from the fridge.

In jars, alternate layers of pineapple and oats, top with tropical smoothie remaining pineapple.
