Add the flour and oatmeal to the bowl, a little at a time, whisking continuously.
Then add a pinch of black pepper.
Keep whisking the mixture until you have a nicely aerated batter.
Then place in the fridge and allow the batter to rest for 20 mins.
In the meantime pre-heat your oven to 230°C.
Take a 12 cup Yorkshire pudding tray and grease each cup thoroughly.
Then cut the vegetarian sausages into 2cm pieces. Place one piece of sausages in each cup.
Put the tray into the oven and cook the sausages for 3 mins.
While the vegetarian sausages are cooking remove the batter mixture from the fridge and whisk once more to ensure it is fully aerated.
Then, and with speed! Remove the tray from the oven and quickly ladle the batter mixture over the top of the vegetarian sausages, filling each cup half full.
Place the tray straight back into the hot oven. Cook for 10 mins at 230°C, until the batter has risen.
Then reduce the heat to 180°C and cook for a further 10-12 mins, checking on the puddings to ensure they do not burn.
Remove from the oven and allow the pudding to sit for a couple of mins.
Then serve hot with plenty of seasonal vegetables.
