In a large bowl, combine the tuna, eggs and Mornflake Oats. Add the spring onion, ginger, coriander, chilli, lime leaves, fish sauce and thyme. Mix well and season with salt and pepper.
Heat the oil in a large frying pan and drop tablespoons of the mixture onto the frying pan, flattening each slightly with the back of a spoon. You should have enough to make 8-12 small cakes. Cook for three minutes on each side.
Serve hot with a thai-style dipping sauce.
