    To make the cookies, add the nuts into a food processor and blend for a few seconds to crush them into smaller pieces.

    Add in the rest of the ingredients and blend everything together until the mixture starts to clump together and could be pressed into a cookie shape.

    Take small amounts of the mixture and mould into cookies. Place these into the freezer to set.

    For the filling, mix the coconut yoghurt ingredients until well combined and spread a little on half of the cookies. Place the remaining cookies on top and serve.
