This recipe takes 'superfood' goodness and turns it into a simple to prepare nutritious Porridge. The oats are cooked in Beetroot juice, hailed for its stamina boosting properties and the sweet tasting, powerful antioxidant, pomegranate juice. The Porridge is topped with all the berry power from the superfood gem blueberries and extra energy from the runners favourite; bananas.

    Put the oats and juice into a heavy based saucepan and stir thoroughly.

    Place the saucepan over a high heat and cook until the oats start to boil.

    Reduce the heat to a simmer and stirring constantly cook the oats for 3 mins or until you have a nice thick Porridge.

    Pour the Porridge into a bowl.

    Thinly slice the banana and scatter the pieces over the Porridge.

    Finally give a good squeeze of the blueberry sauce all over the Porridge.
