Blitz the Mornflake Superfast Oats/Scottish Jumbo oats in a food processor with the blade attachment fitted or in a smoothie maker until you have a very fine ‘flour’.
Remove 50g for rolling the wraps later.
Pour the rest into a bowl, add the salt and stir.
Pour the water into the bowl and use a blunt knife to bring the dough together.
Knead well for 3 minutes by hand or 1 – 2 minutes in a mixer with a dough hook.
Use a spoon to scoop 6 balls of dough from the mixture, coat in the oat ‘flour’ set aside earlier, then flatten into a disc and place on a large plate.
Cover the whole plate and leave the dough to rest for 15 minutes.
Use a rolling pin to roll each disc into a very thin wrap, using more oat ‘flour’ to stop it from sticking to the work surface, then fry for 1 – 2 minutes on each side in a frying pan over a medium heat.
Fill with grated carrot, hummus and raisins for a healthy lunch, or whatever you prefer.
NB: These wraps are best eaten within 48 hours of making, but they freeze really well. Simply place a sheet of non-stick baking paper between each wrap before freezing. Leave to defrost at room temperature and reheat if you wish in the microwave or by briefly frying in a hot pan.
