Combine the dry ingredients in a large mixing bowl.
Pour apple juice into a separate bowl and add sugar, mix well.
Mash bananas and then add to the apple juice mixture. Whisk together.
Break in the eggs and stir with wooden spoon.
Mix wet ingredients into the dry, stir until combined.
Pour into a well greased loaf tin.
Place the tin in an oven pre-heated to 180°C for 40 minutes.
Remove loaf from the oven and leave to cool on a rack for 15 mins.
When cooled, remove from tin and slice.
Serve with a dollop of greek yogurt and sliced bananas - delicious!
