Oat & Almond Crust filled with Feta, Caramelised Onions, Squash and Asparagus

    Preheat the oven to 180 C

    In a mixing bowl add the oats, almond mix, dried spices and mix together

  3. 3

    Add the whisked egg and mix until a combined

  4. 4

    Fill a greased tart tray with the mix making sure it is all covered then using a fork prick the base several times

  5. 5

    Add to the oven for 5-6 minutes to slightly cook the base

  6. 6

    Whilst the tart base is in the oven, roughly chop the onion and cut the asparagus stalks into strips

  7. 7

    Take the tart out of the oven and add ½ the feta. Then scatter on the asparagus, & onion

  8. 8

    Add the other ½ feta cheese and give a generous pinch of salt, pepper & fresh basil

  9. 9

    Bake for 15-20 minutes until the cheese is starting to turn golden

  10. 10

    Serve with a plate of fresh baby spinach & drizzle over balsamic vinegar
