Indian Spiced Mackerel Recipe

Ingredients

  • 4 mackerel, filleted, skinned and cut into lengthway slices
  • 6 tbsp Mornflake Oatbran
  • 2 tbsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Half tsp chilli powder
  • Half tsp ground turmeric
  • Salt and pepper
  • 3 tbsp sunflower oil

Cooking Instructions

  1. In a mixing bowl, mix together the Mornflake Oatbran and spices together with a little seasoning.
  2. Put the mackerel pieces into the mixing bowl and coat with the oat bran and spice mixture.
  3. Heat up the sunflower oil in a non-stick frying pan. Add the fish in batches and cook for 2-3 minutes each side until golden brown. Drain on kitchen paper.
  4. Serve with yoghurt, cucumber and mint and a simple tomato and onion salad.
