Line a 20cm brownie/baking pan with baking parchment and preheat oven to 170°C.
Chop 75g of the dark chocolate into smallish chunks and leave to one side.
Sieve flour, cocoa and salt into a bowl and mix to combine. Slowly melt butter and 125g of the dark chocolate either in a pan or in the microwave (just until it’s melted together – do not cook!), stirring every now and then.
Using an electric whisk (or arm power) mix eggs, caster sugar and vanilla extract together until creamy and thick. Add slightly cooled melted chocolate mixture then slowly mix through.
Add sieved flour mix and fold in using a spatula or spoon.
Once combined add 50g of the chopped dark chocolate and 100g of the granola and mix in.
Pour mix into the prepared brownie pan, then sprinkle the remaining granola on top.
Bake for 20 minutes, remove from oven and sprinkle remaining 25g of chocolate chunks on top.
Leave pan to cool to room temperature then place in fridge to chill. Once completely cold (around 4 hours or so – overnight is fine), remove brownie from pan. Using a sharp knife, cut into portions.
We like to keep our brownies wrapped in parchment in food safe boxes in the fridge to keep fudgily gorgeous. Will last a week in the fridge (as if!) or months if kept in the freezer.
