    Preheat your oven to 180c

    Line a loaf tin with grease proof paper.

  3. 3

    In a food processor, add in the oats and blitz these until they form a fine flour consistency. Set this aside in a bowl.

    Add the bananas, coconut oil, coconut sugar and honey into the food processor and cream these together until smooth. 

  5. 5

    Crack in the eggs and add a dash of vanilla extract and blend everything again.

    Next, pour in the dry ingredients- including your home made oat flour and blend the mixture in the food processor one more time until you’re left with a smooth batter.

    Pour the cake mixture into the lined loaf tin and bake this in the oven for 30 minutes.

    Cover with foil, to ensure the cake doesn’t burn and cook for a further 10-15 minutes until a skewer comes out clean.

    Place the loaf onto a wire wrack and allow to cool completely.

    Meanwhile, in a bowl, mix together the coconut cream, honey, vanilla, lime zest and a tbsp of gin.

    Pop this into the freezer to thicken whilst the cake cools.

    Once your cake is completed cooled, drizzle in the coconut glaze and decorate. Enjoy!
