    Preheat the oven to 170 °C

    Put the butter, sugar and syrup into a deep saucepan.

    Place the saucepan over a low heat and gently melt all the ingredients.

    Remove the saucepan from the heat and stir in the mincemeat.

  5. 5

    Stir in the brandy and finally the oats

  6. 6

    Lightly grease a shallow baking dish.

    Spoon the oaty mixture into a baking dish and smooth with the back of the spoon.

    Place the baking dish on the top shelf of the hot oven and cook for 17-20mins or until the flapjacks are a nice golden colour. You may need to turn the dish turning half way through cooking.

    Allow the flapjacks to cool for at least 1 hour.

    Then slice and serve, we like with a warming cup of hot chocolate.
