    To make the Ratatouille: Heat the olive oil in a heavy pan and gently sauté the onions and garlic until translucent and soft.

    Add the courgette and tomato and cook for a few minutes.

    Add the beans and basil, season to taste and cook a little longer.

    For the Crumble: fry the oats and breadcrumbs in the olive oil until they are crisp.

    Cut the peppers in half lengthwise and remove the seeds, membranes and stalk.

    Arrange in a roasting dish and pack with the ratatouille mix, arrange the crumble mix on top.

    Bake at 180C / 170Fan / Gas 5 for 15 minutes until the peppers are soft and the crumble crispy.
