Banana & Blueberry Waffles

These waffles are not only gluten free but also suitable for vegans, refined sugar free & nut free so anyone can eat them! Made by Nourishing Amelia in aid of Coeliac Awareness Week.

    Combine the flaxseed with the water in a small bowl and leave to thicken up.

    Add the oats to a food processor and blitz until a flour forms

    Add the oat flour into a mixing bowl and combine with the brown rice flour and baking powder.

    Add the melted coconut oil, banana, coconut sugar and almond milk to the food processor and blend together.

    Add this liquid mixture to the mixing bowl with the flour, along with the now thickened flaxseed mixture and cinnamon. Mix Well.

    Make sure your waffle batter is hot and ready to use then brush both plates with melted coconut oil to prevent sticking.

    Pour in about 1/3 of the waffle batter and cook on a high heat for about 6-8 minutes (depending on your waffle maker).

    Once cooked, carefully remove the waffle and put it to one side. Then repeat until the rest of the waffle mixture is all used up!

    To make the warmed blueberries, simply add the blueberries to a saucepan over a low heat and cook for 3-4 minutes until they're juicy.

    Dish up the waffles and top with the warmed blueberries. 

     Why not drizzle maple syrup and some chopped nuts for even more deliciousness!
