Preheat the oven to 190°C / Gas 5.
Heat the oil in a large frying pan and sauté the onion until soft. Add the oats, and breadcrumbs and cook for another few minutes.
Add the parsley, apricots, apple and mix. Mix in the stock, adding in a little more liquid so the mixture is of a binding consistency.
Put the dripping to an oven proof dish, and put into the oven to melt.
Shape the mixture into about 10 walnut sized balls, put them in to the dripping and gently roll the dish to coat them.
Bake for about 25 minutes, turning once, until golden.
